From mild to extreme: understanding Scoville Heat Units.
SHU gives chilli growers a useful way to compare heat, but actual pungency can vary with genetics, maturity and growing conditions.
A practical heat scale
0 SHU: no heat. Up to roughly 5,000 SHU: mild. 5,000–50,000 SHU: medium to hot. 50,000–350,000 SHU: very hot. 350,000 SHU and above: superhot territory.
For pepper varieties where we have a reliable reference range, the product page shows an approximate SHU range. Where we cannot confidently verify a number, we show only a general heat class rather than inventing a figure.
